I now have my second 1911.  I don't intend to build my own (wait ... isn't that what I said about my AR's?) but I would like to be able to strip the gun down to its parts and be able to put it all back together.  Can someone suggest a book or manual that would be my best guide.

I use an old military FM or TM.  I think M1911.org or the sight has the PDFs.

side note building a 1911 is nothing like assembling a Ar15.

I know.  I'm hoping the gunsmithing and fitment will stop me from wanting to build one ...

Not really.  OP isn't asking about fitting parts to a 1911, he is asking about detail stripping and reassembly.  I would say a 1911 is more like Legos, since there aren't any roll pins or taper pins, only push pins.
