I like the look of bobtails on the 1911 and understand there purpose. Which makes we wonder why you don't see them on 1911's with 5 inch barrels. Is there some reason why bobtails are not used on fullsize 1911's?

There are quite a few actually. However you will see 10 Commander sized bobtailed 1911's to every full size.
The bobtail mod is for reduced grip, thus reduced profile and chance of printing. More people carry a Commander than a government.

Chances are if your carrying  a full size 1911 your not so worried about printing.

Not so much.
the extra 1/2 to 1" length at the muzzle end makes very little or no difference when it comes to concealment. It certainly doesn't print any more than a Commander as the (pre bobtailed) grip is the same length.
There are still the same advantages to bobtailing a Govt 1911 as there are a Commander sized 1911.

So, I guess I will have to custom order a fullsize with a bobtail conversion or get a smith to modify it.

My problem with government model is that when i sit, the barrel is long enough that it has the tendency to be pushed upward and therefore will have tendency to print even with bobtail plus pressure on your belt.  Maybe if you are a big person then this will not matter.  Maybe the reason why bobtail is less popular in fullsize compared to commander or officers models of 1911.  I'm not an expert and i may be entirely wrong but that is what i notice so far and me having a 4" kimber bobtailed as my carry and fullsize in everything else, IDPA, IPSC, Home Defense etc.
