I was thinking of ordering an ambi safety and beaver tail grip safety and was wondering about fit and finish of drop in parts.

Neither of those two parts are true drop in parts.  You may get them to drop in but they will not fit very well.

I would recommend having them properly fitted.

Usually the grip safety will have gaps if not fitted, and the safety you can get drop in they do not always fit and ensure that is passes a safety check if it does drop in.

Both of those items need to be fitted.  You may getaway with a the beaver-tail safety, if your gun already has the frame modifications.

Agreed.  In this case drop-in means "less fitting" but they are not truly drop-in.

Yep.  On a 1911, drop-in parts.....aren't.  They're just easier to fit.

Drop in parts are a myth...
