Does anyone have a list (or know where to find one) of what production 1911s have firing pin blocks (and of what type)? I know that S&W and Kimber have them on the grip safety. Also Colt uses the series 80 system. I also know that Springfield does not use a firing pin block. There are many other companies selling 1911s these days and I have yet to come across a complete list of differences in the firing system by company.

SGB, I know the Colt and Para use a series 80, Kimber and S&W use a Swartz type, how are the Taurus and Sig configured?

Taurus and Sig both use a trigger actuated firing pin block similar to Colts.

Is this true for all of their models or do they offer a version similar to Colts series 70 reproduction model? Do any other companies besides Springfield Armory offer a (non semi-custom) 1911 without a firing pin block?

IIRC, RIA, Armscorp, DW, CD, and Auto Ordnance don't, but nearly all of those companies have other issues to contend with.
