The new hammer I picked up for my Springer has a full width half-cock notch
and I was wondering if it is ok/worth it to have the reliefs machined into it?

It seems simple as removing material where the parts of the sear that contact
the hammer hooks would hit...

Worthwhile, or should I just stone 'er  and get to shooting?

I routinely relieve the half-cock just as you described.
Look at a Wilson #337 ultralight hammer for the best technique.
