I've been out of the firearms seens for a little while but am happy to say I've returned.  I've always loved 1911's so that's the first thing I'm going to pick up.

Here are my options:

$549 GI Champion
$589 GI Stainless 5"
$695 Stainless Mil-Spec 5"

I'm leaning towards one of the GI models just to save a few bucks.  Can these sights be changed later or do I have to machine the slide to put in a decent sight?  Should I just spend the extra $100 now for the Mil Spec?

Mil-Spec, no question.  Some of the best bang-for-the-buck 1911 available...IMO.  Some of the basic mods you might do to a G.I. will cost way more than getting the Mil-Spec to begin with, i.e. better sights, lowered ejection port, polished ramp, etc.  I have both and the G.I.'s are great and lots of fun, but better left as is....again, my opinion.  My mil-Spec is about to receive it's first upgrades...."commander" style hammer and beavertail grip safety, all for $150.00 at SA Custom Shop.

Now, before I get hammered on this...yes, you could buy a Loaded, Trophy Match or TRP and get lots of goodies right away.  But, it appears that those would be out of your intended price range.  I must say though, if this is intended to be your only 1911 ("yeah, right" the hive says) then save up for the TRP at about twice the price of a SS Mil-Spec.

Bottom line...you cannot go wrong with a SA 1911.  Good quality and customer service that just can't be beat.

Happy hunting and I'm jealous.  You only get to buy your first 1911 once.

I agree, you'll be happier with the Mil-Spec as a practical shooter. Most of the guys I know that bought the GI bought it for nostalgia purposes, and it isn't their only/primary 1911. The basic mods of the Mil-Spec make it a much more appealing 1911 to own.

I would also suggest going with the MilSpec.

I'm looking at the Mil-spec in Parkerized. I think I found a pretty nice deal. NIB, shipped and transferred for $550.

That's a hell of a deal, I can only find GI's for that price.  You should grab that one.

You can say that again.  Hard to believe actually.  I hesitate to question, but....the G.I.'s also have the word Mil-Spec on the box.  I've had more than one occasion where a gun store guy has referred to a G.I. as a Mil-Spec, not knowing any better.  If it's actually a Mil-Spec, that's the best deal I've ever seen...especially out the door, shipping, transfer, etc.  Wow.  All things considered, that's even a great deal on a G.I.

The parked MilSpec that I filed paperwork on Monday for was $580 OTD. I thought that was a great deal!

I was looking at the same three pistols this afternoon. The stainless mil-spec came home with me.
