Is it possible to have a barrel on a 3" S&W revolver switched to a 2" barrel?

Depends on the model, they may have made it in a 2".  Therefore you might be able to go buy the 2"er somewhere.  Or you might be able to send it to S&W if you can't find what you are looking for.

Yes, if you have enough $$$$, the S&W custom shop will do damn near anything you pay to have done.

Maybe.  If it's a 3" J-frame, you can buy a new 2" barrel.  I think you'd also need a new ejector rod, though.  If it's a 3" K-frame, they never made a 2" barrel for that.  You'd need to cut it down, and re-crown and reinstall a front sight.  You might not be able to cut to 2" though, again because of the ejector rod.

10-4.  Its a 3" J frame.  It has oversized grips.  I was thinking that if I could get a 2" barrel and put regular grips on it I would have a nice pocket gun.  I was seeing if it was cheaper to convert as opposed to buy another pistol.

Don't do it!
I don't know if you've shot yours, but the 3" Chief I have is very accurate. It's a great lightweight belt gun too. If your's is in really good shape, it's worth at least $300 if it has the pinned barrel.
Swapping barrels on S&W revolvers has never been a good thing. You take a great gun and make it so-so as far as fit and finish. Besides the barrel and ejector rod cost, labor to R&R the barrels, then refinish, you'll be out at least $250 and more like $350 if you get a quality gunsmith to do a quality job.
Not worth the expense to R&R the barrel. Cutting the existing barrel down will give you a "bastard" gun with very little resale value. The really good gunsmiths that I have dealt with would tell you it is not worth the money to do it.
As far as 2" barrels on K-frames, they are not that uncommon in the M10 38 Spl. There are even 3" barrels in the M13 357 Mag.
Anyway, take it for what's it's worth. It's your gun!
