I've got that series 70 Colt Government 1911 my grandpa gave me, and I want to order some wilson combat mags for it.

I want whatever the stock capacity is, so the mags fit flush with the bottom of the grip.  Do I order 7 rounders or 8 rounders?  I'm not ever going to carry it CCW, just for the occasional trip to the range to launch some .45 ACP.

They make flush mount 7 and 8 mags.

Yep.  GI's got 7 rounders, but there are 8 rounders around now, and that's what I use... but I carry mine, so I like the extra round x 3.

I run the Tripp 7rnd upgrade in my Colt magazines, work like a champ.

Does the OP want a true FLUSH fit magazine?

Wilson 47d are not flush as a USGI magazine is.

Having a little bit of a thick baseplate is okay, I only have the one original magazine with the gun, and don't really want to shoot with it.  I just want to make sure I don't have like an inch of magazine sticking out of the bottom of the gun.

Depends on the base plate from wilson but they will stick below the gun 3/32 to 1/4 (all approx).  Metalform and tripp, both make reliable  true flush fit (within .010 approx) magazines.

Since you aren't carrying it, you can try whatever variety of stock magazines, perhaps Chip Mc Cormicks or Tripp Research (if they make a standard USGI), or of course, the standard Colt replacements. Wilson Combat and Tripp Premium magazines are NOT flush fitting, and for good reason. Last thing one wants is a flush-fitting mag to wrestle with on a high-stress reload. Since this isn't a concern, I would go with nickel or blued factory replacements.

Sorry to run off-topic, but can anyone school me on how they are squeezing an extra round in flush fit mags? Are the followers different?

I believe the first design to do this sucessfully was the Wilson-Rodgers design, which got the 8th round by massaging 7 round mags. This was done with a modified spring and different follower. These two mods took up less real-estate in the tube and gave the mag an extra round. Some have argued that the reliability is compromized compared to the standard 7rd design, however.
