People who own or have dealt with both, opinions? Experiences?

I am looking for a comparison of:

Fit/finish
Accuracy
Customer Service
CONSISTANCY
Reliability

THe two models I am directly comparing are the CQB Elite CQB Elite and the Enforcer Enforcer .

I'm not sure I could pick which is better by the questions you ask.  I think both make excellent weapons and both are known for good CS.  Wilson might be a bit better, but when they are both great it's like picking between a 9.4 and a 9.5, not a big enough difference to sway me to purchase one over the other.

I think it would have to be a feeling thing, and while the CQB is freaking awesome...that NightHawk sings to me.

Fit/finish - , this phrase was coined by someone who doesn't know any other way to describe a firearm. Both will be properly fit. Both will have a finish on it.
Accuracy - You'll never know either way.
Customer Service - Both have had bad and good reports
CONSISTANCY - huh?
Reliability - its a 1911, expect to be disappointed if you cannot keep up with its maintenance schedule.

Did you mean consistency, or constancy?

Owned an NH, enjoyed it, sold it because I wanted different sights; asked Ron Phillips to make me one himself.  Ron was near the top of the foodchain in both companies; he made me a pistol himself, for about the price of similarly equipped Wilsons or NHs.
