I have a couple pistols that often don't lock the slide back after the last round.

One is an XD9 with both of the new 15 round mags I bought.
It doesn't do it as often with the 10 round mag.

The other is a Sprinfield double-stack .45.
This one used to slide lock when I ran it dry but now it almost never does.

Any ideas ?

Im not really very experienced with this kind of stuff. But is it possible your grip inadvertently presses up on the slide stop causing it wear over time?

Try this...take an empty mag and insert it in the empty pistol...slide forward... then pull the slide "smartly" and completely to the rear. If the pistol locks the slide consistently in this condition there is a good chance that your shooting grip may be the issue. If not, it could be that you have reassembled mags with the springs turned back-to-front or possibly some other problem, but my guess, since this is happening with two completely different guns, is that your shooting grip is the culprit. Recoil adds a a whole 'nother dimension to things.
