I have some questions about Nighthawk Custom pistols. I have visited their web site but there isn't much detailed info there.
I am an experienced handgun guy primarily 1911s. I have a Norinco 1911 Gov. that has been upgraded at Wilson Combat back in 1994, a Springfield Range Officer I got new in 2012 and a Springfield stainless Loaded Target in 9mm all have many rounds thru them. I've also had Taurus PT1911s in .45 and one in 9mm but sold those.

Couple weeks ago I picked up a used Nighthawk Enforcer that I bought online for $1995 shipped. From looking at 'used' Nighthawks on Gunbroker for $2700 & up I wasn't expecting much for under $2000 but when I got it I was pleasantly surprised to see it was in excellent condition.

My Enforcer apparently was made using one of the left over Larry Vickers frames as the serial # starts with LV. and the feed chute and plunger tube are integral with the frame and the trigger is solid aluminum with hidden set screw stop all of which is consistent with older LV frames...ithink?

-Undercut Below Trigger Guard:
I have seen that most but not all Nighthawks have the grip frame undercut just below the trigger guard. My Enforcer has this undercut.
I am looking at a newer NH Dominator with adjustable rear sight that has no undercut.
~ Why does the newer Dominator not have the undercut?

-Test Targets:
Far as I know every new NH pistol is shipped with its particular test target.
Having looked at a lot of GB auctions for NH pistols most of those auctions include a pic of the test target.
The serial number on my NH Enforcer is LV002xx which sounds like an older example.
My Enforcer came with two test targets, one dated 9/15/14 and the other 11/20/14. These are original and not copies. Both targets include the correct serial number. Both targets were obviously written by the same person.
~~ Any ideas as to why my Enforcer has 2 separate test targets?
~~ Any idea what the approximate production date might be for my Enforcer?

-My Enforcer's Extractor:
Fitted into the extractor is 2 small coil springs with a steel sleeve over the springs. I have never seen an extractor like this but far as I can tell this arrangement provides constant pressure of the hook on the case.  
Looking in the 1911 gun parts section of my Brownells catalog I found this extractor to be called the 'Millennium Custom Advanced Competition Extractor' for nearly $80.
~~Do all Nighthawk pistols come fitted with this type of extractor?
~~Any comments on this extractor or why NH uses it?

Any info on the above will be appreciated.

Your Enforcer has a Caspian frame that they used to use for that model.  The post September 2012 Nighthawks have a high cut frame and all machined parts.  So the Dominator that your looking at is an older model.  I have a June 2014 Falcon that has the high cut frame & all machined parts.  I'm becoming a Nighthawk fan for sure!  Love my Baers but the Nighthawk is quickly rising to the top.

I forgot to add those extra test targets are probably from when the pistol was sent back for work or repair.  Your best bet is to call Nighthawk for answers.

Thank you for reading my OP. I appreciate your reply but still I'm confused.
My Enforcer is an older model, pre-2012 as confirmed by the frame and probably the sn yet it has the high cut frame?

Its a Caspian cast frame those are high cut.  The other models used a forged frame doesn't have that high cut.  They quit using the Caspian frame with the cast in magwell & plunger tube some years ago.  They all use the forged high cut frame since 2012.
