I'm thinking about having the finger contour removed, and a full stippling job done. Where do y'all recommend to get this work done and what's the average I should look at paying for this amount of work? It will be on a Gen 4 G19.

Those two things are the easy part. I recommend you researching in to doing it yourself.

Grab a rotary tool and some beer and do it.

It's that checkering and recessed grip texture along with the grip reduction, that gets finicky.

Easy - Cold Bore Custom

His prices are on his website and are very reasonable IMO. His turn around time is awesome and the work is first rate!

Sure you could try to hack at it yourself but your results, especially the stippling won't be as good. This is one case were when you factor in your time and any tools you may need to buy, it just doesn't make sense to do it yourself, especially not for just one gun. Not when a place like Cold Bore can do such a good job at a great price. Just my $.02 on it.

Me. And it's every bit as good as any Salient, Zev, or Agency gun I've seen. I choose to keep the finger grooves as I find it comfortable. I have the "accelerator" cuts on mine like Agency does as well, I just stipple it instead of leaving it smooth - which makes zero sense to me why they do that.

This or Tactical Textures or Bowie Tactical

I haven't decided which of the three I am going to use yet.

Tactical Texture looks the best IMO, but his prices are way too high for me. I'd probably end up going with Cold Bore

Mod 1 has done a G34, G19, G41 and a Kahr CM9 for me.  Excellent work!
