When pistolsmiths put their logo on their custom work, is it engraved, stamped or roll-marked?

Not all smiths do it the same way.

It is electro-chemically etched.

Also, some smiths are receptive to your input for a clean looking gun and will stamp the frame (concealed by the grip panel) upon request.

I've had 4 pistols to Novaks, and I actually did not want any logos on the guns, so they came back unmarked per my request.

If its a top end custom shop I would definately want a marking somewhere.  If you try and sell it and have no markings or documentation good luck getting near what it is worth

I still have all the build sheets/invoices, but I don't plan to sell.
