Pig Shots

Ingredients:


   Kielbasa
   Bacon
   Rub (Used my Pork Rub)
   Brown sugar



Preparation: (step by step below)

Cut Kielbasa ½” thick
Wrap in a half piece of thick sliced bacon,
Fill with a 50/50 mix of brown sugar and your favorite rub, I went heavy on the Brown Sugar




Smoking/Grilling

Grilling:Place on the grill using indirect heat. Grill 30 minutes

Smoker: Smoke at 225° - 240° for 2 hours

Bacon Explosion...

2# italian Sausage or even breakfast sausage
1 # of THICK sliced BACON
Your favorite sauce
Build your bacon weave then fry up and crumble the remainder of the pound.
Spread out the sausage, spread the crumbled bacon across your layer of sausage.
Apply Sauce and your favorite BBQ rub on this layer

Roll it up, put it on the smoker at about 250 until done...
in the last 15 minutes paint it with sauce and sprinkle with a little more rub
Slice in pinwheels and serve on two slices of Buttered and grilled Texas Toast...

Enjoy the accolades...

I can see Red Fox doing his heart attack routine, after he would have seen these fatties. Now I need to get a napkin to wipe up the drool. Thanks for sharing. Might have to put one of these together and throw it on with what ever I am smoking.

Yep, they are awesome

Another version I like is to start the same with the bacon weave and sausage.  But for the filling I use scrambled eggs, crumbled bacon, shredded cheese of your choosing and fried potatoes.  It is a great breakfast meal to make for house guests.  Except it makes them want to stay
