........ better than Taco Soup.



1 pound mild (or what ever you want - wife uses jimmy dean with sage) sausage

1 large onion, chopped

3 large Potatoes, peeled & cubed (as a shortcut you can use frozen hash browns)

2 tsp salt or to taste

1/2 tsp pepper

1 tsp dried basil

2 cups water

1 - 17 oz. can cream style corn

1 - 16 1/2 oz. can, whole kernel corn, drained

1 - 12 oz. can evaporated milk



Brown sausage and drain, add to soup kettle. Use 2 tbsp of the fat to saute the onions. Add onions, potatoes, salt, pepper, basil and water to the soup kettle.



Cover and simmer for 15 minutes. Stir in corn and evaporated milk. Cover and heat thoroughly.

I will see your corn chowder and raise you JohnnyEgo's Sausage & Lentil Soup:

Ingredients:
1. Medium Onion, Diced
2. Cup of Celery, Diced
3. (2) cans Diced Tomatoes
4. (2) cans Chicken Broth, Low Sodium  (Tastes more like chicken, less like salt)
5.  Several Red Potatoes
6.  Package smoked sausage (I like beef sausage, wife prefers Italian)
7.  1 Tsp Garlic Powder (or to taste)
8.  1 Tsp Thyme
9.  1 Tsp Basil
10. 1 Tsp Oregano
11.  1 Tsp Fine Ground Black Pepper
12.  1. Tsp Red Pepper or Cayenne (to taste)

Directions:

1.  Bring four cups water to a boil  (I often add chicken bullion to this.)
2.  Pour boiling water over Lentils, cover and let stand for 15 minutes.

3.  In a (separate) large soup pot, sweat diced onions in olive oil until translucent.
4.  Add Celery
5.  Add two cans of tomatoes over low heat.
6.  Quarter potatoes and add to pot.
7.  Cut sausage into chunks/slices and add to pot.
8.  Simmer until Lentils have set for 15 minutes.
9.  Add two cans of chicken broth and all spices.  Stir.
10.  Add Lentils.  Stir.
11.  Simmer covered over low heat for at least 45 minutes.  I usually simmer for a couple hours.

Just like the sausage & lentil soup they serve at Carrabbas, but better, cause you made it yourself.  And also because it has potatoes.

I used the Jim Dean Hot this time around, and it was damn good. So much so I have to hide some so I have enough for lunch tomorrow otherwise the freeloaders are gonna get to it!
