| Anyone know of any places in the Fort Lewis or surrounding areas that can butcher/process a deer? Also what are the prices that I could be looking at? Not looking for anything to fancy, maybe just some steak type cuts and jerky. Been about 6 years since I last hunted for deer and that was back in NY so don't have any information for up here, google was next to useless in trying to find a answer. |

Try asking the butchers at the commissary, they most likely don't/can't provide the service there, but may just know who to point you to. Helpful Hints: After you bone your animal out, freeze it in small Ziploc bags approximately 5 lbs. so it will freeze faster. If you want jerky made, separate the whole muscle, bag and keep it separate from the scraps. Remember always freeze meat right after you separate. Do not try to age the meat; if you are going to make sausage it will give it a gamey flavor. Make sure to freeze your meat immediately, you don't need to thaw your meat prior to bringing it in. There is a 25 lb. batch minimum and a $45.00 boning fee for deer and a $20.00 boning fee per quarter elk. For production purposes we make 100 lb. batches so if you bring in 25 lbs. of meat, it will be mixed with three other people's meat. We do inspect and reject freezer burnt, hairy, dirty, or blood shot meat. Remember, if we start with a good fresh clean product, we'll finish with a quality sausage. For the customer who wishes not to be mixed with others people's meat, we can make a 50 lb. batch with your meat only. Most people hunt in parties, so we have a lot of customers who combine their meat. However, we don't mix species unless it is your own batch. For the customer who lives out of the area, freeze your meat, place it in an ice chest, and send it to us to be processed. We will send it back when it is finished. Call us for shipping prices. The part in red I'm not so happy with, but they make good stuff so I guess it is ok if it doesn't bother you. Stewarts in Yelm/McKenna is also very good. My Brother in law took his elk there this year. They mentioned to him that they weren't going to do wild game anymore, but took his anyways...... I'd call them first before taking a deer to them to make sure they will accept it. |

MB121, Unlike most of the other folks here, I'm not an asshole, and I'd be happy to help you break down your animal. Seriously, I can show you how to bone it out, cut steaks, and figure out what goes to sausage and what gets tossed. Been trained by a great group of guys who know what they are doing. Northwest Sausage & Delli is where you want to take your scraps. We should be able to figure out your jerky here. Ignore most of the other guys. They are much better at gathering than they are at hunting and live vicariously through Tred Bart hunting shows. My 11 and 14 year old have taken more animals in the past 4 years than all of them combined. Go shoot something, then give me a call. Don't worry about it. Just bring some beer. |
