For those of you who have had a table at a Bob and Rocco show what is the standard protocol for checking in? do you need to have the firearms cleared by someone? do the triggers need to be zip tied? what happens if you have to ditch out to use the facilities is it kosher to ask one of the fellow vendors to watch your table? Do i need to ask potential buyers any particular questions before selling them firearms? Anything else i should know?

When you get to the show at setup time find Bob to locate your table.
Park accordingly(close as possible) to unload.
I think all firearms from now on must be ziptied.
You do not need to check your firearms.
Fellow tableholders will normally watch your table if you buy them some coffee or something
If you are selling firearms privately the person buying needs to be a WI resident and of legal age.
You don't need to but you can ask them if they can legally have firearms.
You can also write down their DL then dispose of it after the show.
Do NOT buy a firearm at the show and then put it on your table for sale!
If you get lucky enough to have an ATF agent sell you a dirt cheap firearm you can't refuse make sure it is a legal configuration and then take it home for safe keeping.

From what I've "heard" it'll be more than you are aware of and they are at EVERY show looking for people to bust.

I thought you were going to mention etiquette about not charging $50 for a G17 mag i can buy online for $25 or at Gander for $40.
I've never been to a bob + tom, but I doubt i'll be going to buy anything at a show any time soon.
That said, it might be a good place to sell things

A friend of mine who once had a FFL, and was subject to a "visit" by numerous ATF agents, attended a Bob & Rocco show a few months later (not as a vendor, but just as a regular customer). He said he saw at least 4 of those very same agents walking the aisles of the show.  I was there with him, and he pointed them out. At the next show I attended, I saw 2 of them again. AFAIK, nobody got "busted" at either show, and they didn't try to "set up" anybody.
