Okie Dokie fellas... I processed the hog today. I have enough meat to feed a good sized crowd of hungry guys. We need a few other items if you want to serve this meat 'Family Style.' I think I have enough meat to feed 20-25+ people per meal. If other items are pitched into the spread, we should have a feast all day Saturday for a fraction of the cost of hiring a caterer. Breakfast Saturday. I have 15 pounds of fresh sausage. Want some breakfast burritos? Someone grab some eggs, tortillas, peppers, hot sauce (not you ILL!) Lunch Saturday Carnitas! I have 10 pounds of fresh ground pork. I need someone to grab some limes(8-10), onions(4), more tortillas (several dozen, figure 2-3 per person). butter, tortilla chips and hot sauce (not you ILL!), shredded cabbage, grated cheese, sour cream, guacamole? Supper Saturday 20 pounds of hindquarters. This is in 4 pieces, 5 pounds each. I plan to put them on the smoker/grill sometime Saturday morning and to serve shredded pork sandwiches for supper Saturday. We need buns, tomatoes, lettuce, BBQ sauce, chips. I also have some forelegs that I will put on the grill for munching (caveman lunchables). I will bring the liver, kidneys, and heart, in case anyone wants to stir up some liver and onions or kidneys and eggs, fried heart, etc. I have four pieces of backstrap that I will smoke/grill as needed to make on the fly snacks. You guys want to pitch in a few things (see above then post what you are going to bring) and it should be a fun day full of food. Each persons total cost should be MUCH less than even a single meal, imho. I am bringing my Honda so I will not have all the camping/cooking materials that I brought the last time. I plan to leave my Honda at the hotel/motel where the other guys are staying. Anyone with a truck and cellphone mind coming to get me there and brining me to the Farm? I only have 4" of ground clearance. We also need a small chainsaw to cut the DEAD wood that we will need to cook/grill/smoke the pig. Volunteer? TRG |
What Bung. said. Hey, TRG. I can pick up at the hotel. How's about this idea--You can park at the Hun gate, then we can transport you to the cabin, unless you have to Shower, shave, sh!t. I'll bring some tortillas, peppers. and eggs. I'll ask my in-laws to make some eggrolls also. |

Thanks, Bung. You ain't bad yourself either. LT, sounds like you got half the breakfast stuff, if someone else brings the same we should have plenty. No need for one guy to cover all the meal. Keep in mind we are talking about feeding 20-25+ people. Meat is fairly easy to stretch if more than expected show up to be fed. If we run out of buns or tortillas it gets a little tougher to stretch. I figure we need 4-6 eggs per person, so 20-25 guys means 7-10! dozen eggs. Tortillas 3 each = 5-8 dozen, etc. Also, the way I have it planned, leftover tortillas, hot sauce from breakfast can be used at lunch, left over carnitas can be used for supper, etc. Ice chest refrigeration is good for what we need. Anything leftover from Saturday can go into Sunday's 'Brunch.' Mojo, I am concerned about getting OUT if a sudden rain squall (or Toranado - Edit by LordTrader) comes up. My little Honda is soooo light, it is pure Hell on a wet/muddy road. I am going to try and swing a ride out from the hotel in a pickup/SUV. If it doesn't fall into place that way, then I will drive to the gate. I'll see what the weather is like and go from there as we get closer to 'The' weekend. TRG |

I think we should be planning to feed 20-25 guys, two buns (maybe three) each means 100 buns (plan for a few snacks, extras) 12 packages of buns needed. Three heads of lettuce, 2 dozen tomatoes. Also... I have a large cast iron skillet and cast iron Dutch oven. Don't forget that we will need paper plates, napkins, cookies, plasticware etc., other things that 'flesh out' a meal. If you also have meat that you want to pitch in, feel free. 'Hun Farm Feast' is the idea. TRG |

Ok here is the plan: LT has the food needed to complete the Breakfast menu. Gloftoe has jumped in for the supper needs. I will provide the materials for lunch. Fullclip has a brisket that will be used as an alternative to pork sandwiches for the evening meal. If a few others (Citrabia?) pitch in for plates, spoons, forks, etc. then we should be good to go for the day's meals. We DO NEED a chainsaw to cut dead wood for smoking/grilling. Limbs/twigs are not going to be enough. We are going to need some thicker wood if we are going to keep that smoker humming for 24 hours. TRG PS. 82nd is in charge of the port and cigars. |
Can you grab a couple bags of tortilla chips to go with the sauce? Also, if you are NOT kidding about your chili, then bring it as well, or make it on site. Chili on a breakfast burrito is one of life's finer pleasures. TRG |

What is the chance of the Hun inviting me in Oct when we are there for gunstock? Could some of you put in the good word for me with the Hun? Ed, I am really sorry to be the one to tell you this, but I guess no one else is going to explain this to you. Honestly, we would have invited you already, but ETH is very firm on the rules. There is a "No White Trash" policy in place for the Farm. If we can get ETH to back off on that rule, then maybe we can get you onto the property. Until then, you will just have to live vicariously through these threads. We will take plenty of pics of the food, beer, guns and campfire.
