If you just want to look at one online, just do a search for your county's GIS maps. Dunno if that will give all the info you may be looking for.

Just found those between when i posted this and now.  That's pretty much everything I wanted to know.

Is there any way to search properties by their assessment or tax code?

That would depend on how your county has their website set up. If you want a plat "book" those are usually sold over the counter at the county clerks office. They're printed every two years, and cost about $30. What I do, is when the "new" ones come out, I buy the "old" one... they usually put a heavy discount on any they have left. Got my last one for $5.  I mainly use them to distinguish between private and public land for hunting purposes... not much changes in two years in that regard. And it's nice to have the book with you in your truck when you're scouting.
