If you don't remove it earlier than 160* and let the "carry-over" take it the last few degrees, it will be over-cooked. The FDA now says 145* with a 3 minute rest is GTG for farm-raised pork. Wild pork should still be cooked to 160*.The pork looks great. As long as it reaches an internal temperature of 160ish you won't get worms from it. BTW, I don't get the whole "swine is a filthy animal" thing that the (insert group here) likes to spout. Farm-raised pork is some of the cleanest (health wise) meat available. Regulated steady diet, medical care, lack of predators, etc. Hell, chickens are the ones that eat their own shit and the (insert group here) seem to have no problem eating chicken. |
