I've never visited Miami before, and I'll be there in two week for a short visit.
Suggestions on must-do, must-see places and eateries?
How about things geared toward shooting enthuathiasts?
Which gun-related businesses are based in Miami?

What do you like to do? What kind of food do you like? Where are you going to be staying? Do you have a rental car when here? These are questions that I need answers for.

The Coral Castle isn't too far if you have a car. If you want to see some remarkably bad baseball, the Marlins play the Cubs on the 18th and 19th.

Check out Southern Defense Solutions, my buddy Gabe works there he'll treat ya right. They have some cool class 3 goodies and a good selection of guns for a smaller shop when I was last there. If you're gonna go shooting, Henry's is the only range to go. Way the hell out on a farm road BFE in Homestead

For food I can tell you Islas Canarias is pretty damn good and reasonable too. Sergios as well.

On this trip, I'd be interested in seeing/doing anything shooting related or touring things such as military museums or exhibits.

I like fresh seafood, and I'd also be interested in good authentic Cuban food.

I'm staying at the Courtyard Marriott in Miami Beach, but no rental car as of yet; I can get one if it would be worth it to explore.

For fresh seafood, try Garcia's on the Miami river.   For authentic Cuban cuisine, pretty much anywhere in Little Havana.

If you want to leave south beach you will really need to get a rental car. Public Transportation in Miami sucks. If you stay on the beach taking a bus is pretty easy to do.  Depending on what days you have open you could go down to Henrys range which is about 1 hour from the beach or check out Pembroke Road Gun club which is north of you. If you are on the beach I would be hanging out at Fat Tuesdays on Ocean Drive and 9th street just people watching.

For Muesums
Wings Over Miami at Tamiami Airport
Gold Coast Railroad near  Zoo Miami

For food you should eat at a Cuban resturant at least one time. Generally speaking La Carreta is pretty good choice and they are all over Miami.

Scotty's for seafood? Maybe for a fish sammich on the water, but I go there because it's on the water (I usually go by boat, but have been known the drive there) and has excellent atmosphere not for the food.

OP don't get me wrong Scotty's is a great place to go get some bar grub on the water, but a fine dinning Seafood establishment it is not. I go there quite often usually after fishing or lobstering trips. Its a really great place to hang out.

Really? Bad baseball? Last I checked the Marlins were second best team in NL and fourth in the Majors. Check out a game. They're doing good.

I've always been interested in the Coral Castle, so that alone may be worth a car rental.

How far is Vero Beach? I may be interested in driving there to visit Knight's Manufacturing Company (KMC) and touring Reed Knight's Stoner collection...

Vero Beach is about a 2-2.5 hour drive north. Depends on date and time, as it varies with traffic.

IIRC Knight's is based in Titusville now... not too much further north if youre already in Vero Beach but is in Brevard County, quite a trek from Miami-Dade County...

ETA:

also from what i understand they discourage all visitors

but you can at least drive by it on US1; it's really close to the KSC Visitors Complex and the Police Hall of Fame museum thingie

If you're going as far north as Vero Beach you can check out the SEAL / UDT Museum in Ft. Pierce. I've neever been but I've heard it's worth the stop.

For a place to eat I like Burgers & Beer on Miami Beach.
