I'm so excited...  I am currently making my first loaf of bread- ever!!!  (excluding bread machine bread)  My grain mill came in today and I couldn't help it- I HAD to make some bread!   I used hard white wheat to make the flour and I'm excited but still a little scared that its not going to be edible...  We shall soon see!

It turned out pretty good- a little dense, but I think that's mostly because the bread pan I have is smaller than the average loaf pan.  You can see towards the top where the bread wasn't confined as much by the pan that the bread is less dense with more air pockets.  Overall pretty good I suppose since my husband just went in for his third piece.  My 10 year old just woke up and asked if she could have some- she said it wasn't sweet like the beer bread (from Tastefully Simple) that I make but that it was "pretty good."  

I'll probably make another loaf tomorrow to take over to the parents' house for my sister's birthday party.   It wasn't too bad!  I'm going to try and find the recipe that was listed on here a few weeks ago and try making that one to see how it is!

Good for you. Now you need some homemade butter to go on that bread. One of these days I am going to get a mill.

try
3 cups flour
1 1/2 cup warm water
1/2 table spoon salt
1/2 table spoon yeast

let sit for at least 6 hours. form into a fast loaf and put in a coverd dutch ovenat 500 for 15-17 mins then uncover for 5-10

its the easyest bread with the best taste

Do you use milled hard white wheat in this or generic grocery store flour?

i have used flour that was milled from are local mill and stuff from the store. both work great. its so easy and comes out really well. we use a dutch oven and make it into a ball and toss it in. make sure u put ur dutch oven in when the oven is cool. never put one right into something hot. or dont put a hot one in cold water. both can mess them up.

Do you mix ingredients together and put in the dutch oven to rise for 6 hours?  You let it rise in the dutch oven?  Or, do you let it rise in a bowl, punch down and put in dutch oven?  Then bake covered at 500*F for 15-17 min? Then bake uncovered for another 5-10 min?

Sorry.  New to yeast bread baking!

Sound good and easy if I can get it straight!!!

No punching, rise in one bowl bake in another (preheated) bowl / dutch oven.



I have made this several times for different people and get raves every time.  You'll have to play with it to adjust for altitude and add more yeast (that's what worked for me...) to get the good bubbly insideyness...  Super easy recipe.  I now have it committed to memory.

The best whole wheat bread I have been able to make is the method off WaltonFeeds Website.

I have tried all of the easy, quick, simple breads on survival forums and they tasted OK.  I really started getting great bread when I started looking on baking forums.  Multiple rises, slow rises over night, starting with a sponge, slicing the formed loaf and soaking your flour all help make a lighter loaf.  For rolls that is all I need.  With bread for slicing I substitute about 25% white flour, it just helps the bread rise so much better, gluten does the same thing but it makes bread bitter.  

I would stick with that smaller bread pan, I tend to get a better rise and lighter loaf out of a smaller pan.

put it in a diffrent bowl to raise. then pre heat ur dutch oven to 500 and put it in. here is a link to a video on it   easy bread
