They are an old time food that is still somewhat popular here in maine, they are essentially baked beans that are cooked in a hole in the ground. You make a hole about 3 feet in diameter and 2 feet deep (two used truck rims are the best and easiest way to do it) make a hot fire for at least 3.5 hours, shovel out some of the coals, put the beans in and cover completely with the coals you just dug up. Leave for about 15 hours and you will have the best baked beans. P.S. here is a basic recipe that is probably over 100 years old. 5 cups beans 1/2 cup molasses 1 1/2 lbs salt pork 2 teaspoons dry mustard 1 teaspoon salt (i don't both with it) pepper |
