In honor of being alone on Christmas, I decided to make some bread.

Montana Wheat Prairie Gold


Wheat Mill


Grinding


Ground


Recipe

1.25 cups + 3 tbs of water
2 tbs Honey
1 tbs Brown Sugar
2 tbs Butter
1 tsp salt
4 cups freshly ground flour
2 tsp Yeast

I cheat, because I use a bread machine to mix the dough



Kneading


Risen in the machine


Rolled out


Cut to make two loaves


In the stoneware


Risen in the pans - not as much as I was looking for.


Second batch rose better.


Done and ready to eat


Time for some red wheat bread too

I recently picked up a bread machine for $8 at a thrift store.  It sucks for making bread but for making dough it rocks.   I make pizza dough and bread dough in the machine and do the rest by hand.  It just takes a few minutes to load it up and then an hour or so later you have dough.   A bread machine is a really nice thing to have around.

I prefer my wife's kitchen aid mixer. Mixes the dough SO much better than the bread machine we had.

I'm kinda curious about the mill. Does it work real good? I've been wanting to get a mill to try making some Acorn flower when the next batch comes on.

It works well. I don't have anything to compare as this is the only one I have used. I have had it 7 or 8 years, and it has not failed me yet.

You have to keep the filter clean, or it doesn't grind as well. I usually grind a couple of cups and then clean out the filter. If you have a lot to do, it is best to grind  maybe 4 cups and let it cool off for a few minutes., it does get hot. I grind enough for a couple of loaves, and then stop and mix. By the time I am done, it's cooled off.

I have done several kinds of wheat (red, golden, kamut, and pastry)  and corn in it. Nothing else so far.

very nice, I made a couple loaves of italian bread to bring to my sister's house last night.  It was received and eaten well.  Not self ground but self made.

I just dragged out our West Bend Bread Maker &
started cleaning it up. A friend ground some
Montana Gold a few nights ago, so I am going to
try a batch in the bread maker.

Do you pre mix the ingredients before adding
them to the maker, or just dump them all in
& turn it on?

Pen, very nice! We got a bread maker several years ago but I'm the only one using it. My wife just likes the end product. I also normally just use the dough cycle then cut and form the dough into two loaves and oven bake 425 for about 20 minutes. I don't use the bread pans any more, just form the loaves on a cookie sheet.
A trick I learned to make crusty French  style bread is to throw a handful of ice cubes onto the oven floor about half way thru. The steam is the key to a nice crust.
John, my machine's instructions specify to add the ingredients in a particular order: warm water, oil, salt, flour, then yeast for basic bread.

Water and salt in first, flour on top, butter in the four corners and honey and sugar on top of that, yeast last in the middle.

Watch it after it mixes to see if the mix is right, may need to add a tiny amount of water or flour to get the consistency right. Then just let it go.

are packaged by 1/4 tsp units.
Is two tsp's correct for this recipe?

If it is bread machine yeast, 2 tsp, if it is Active Dry Yeast 2.25 tsp.


As for the pics, they are loading for me, and hosted here so I don't know the issue.

The wife unit misread the units on the
packages. 1/4 oz packages.

I have Active Dry Yeast & Highly Active
Yeast.

I'll have to start it in the am...

Yeah, they would load for you as they were originally on your computer and a copy would be resident in your browser cache on your computer unless you cleared/deleted it.

I added a couple of tablespoons of water at
the end of the first kneading session. Other
than that I left it alone.

The hardest part will be grinding the
flour!

Not any with no yeast.


Quick Pita
1 Tbsp. yeast
1 Tbsp honey
1/2 c. warm water
1-2 tbsp. oil
1/2 tsp. salt
1-2 c. whole wheat flour
Mix ingredients; knead until smooth. Divide into 6 portion; roll then flatten between your palms. Let rise a little or pan fry immediately. [Optional: place on greased cookie sheet and broil - flip when brown on one side.]
