| I am new to canning and I just tried my hand at it this weekend. I thought I would start small and just do three QT jars of applesauce. The problem I had was that the pot that I used was not tall enough to completely cover the jars, 1/8" of the jar lid was not covered by water after the process was complete. However the jars did seal. I lifted the jars by the lids and the lids are concave. My question is that even though the water did not completely cover the jar, could it seal so that it could be stored? Also, could you process a jar that has more than the recommended head space? |

I wouldn't lose too much sleep over it. If you started out with the jars well covered with water and you got good seals, your applesauce should be fine. Time for a bigger canner though!
You can process partial jars but those jars are at higher risk for siphoning and seal failure. I usually don't bother. If I have a partial jar at the end of a batch, it just goes in the frig for eating fresh. |
