Do any of you have a favorite meat curing forum?
I do my own bacon and sausages but I am looking to make my own hams and salumi. I have a solid background in home butchering and own a few books like Chacuterie and the CIA's book on chacuterie but occasionally you have questions that cannot be answered by a book and only hands on experience can answer. Also, do any of you have a mother of vinegar? I lost mine in a divorce and the cheapest I have found online is $25 plus shipping I appreciate your help, This is also cross posted in the survivla forum, as a lot of those guys are DIY |
