I don't know if you can camp there "survivor man" style but you can check out the following:

Camping in NJ State Parks paying attention to the wilderness campsites.

You might also ask the guys in the NY/NJ hometown forum.

UGLY-

I'm in NJ and have bitten by the camping bug bigtime - just got back
from a wilderness trip to the green mountains of vermont - that where
you want to do the survivorman thing. Otherwise south jersey may have some areas
where you can do that sort of thing. If you are in north jersey and want to go to a
state park, round valley resevior has "wilderness" camping that rings the edge of the
res. You have to either hike 3 miles min to 6 miles max or boat in (whole other set of boat regs
but that a soap opera for another day...) BUT if there are
high winds they shut the whole lake down. Highly regulated and patrolled by state police
game wardens etc.  but prolly the closest you'll get to legal camping on state land. You'll still
be "assigned" your "wilderness" campsite # 1 thru 83. If you are willing to drive 3 hrs
PM me & I'll tell you a little bit about VT and the GMNF. Effen awesome...
Then if you're willing to ahem, bend the rules a bit there are THOUSANDS of acres in NJ
that are open to hunting and hiking ONLY (Waywayanda, Sterilng Forest etc.). Gotta get
out by dark, no camping, starting a fire is a capital offense - no trial you 're simply shot
on site . If you are stealthy and aviod starting a fire you may get away with sneaking
an overnight in these areas. Gotta love this state - you wouldn't be one of the 52% that wanna get the
eff outta here would you? I need directions...
