I have a young fig tree that I've nurtured over the summer. Its in a pot still. What do I need to do to protect through winter?

I've seen all kinds of treatments from bringing them inside a heated garage to covering them with straw.  I think a neat thing to do would be to espalier the tree against a warm wall of your house.  Not sure what zone you are in,  Here in 7b, most figs eventually make it, though late freezes keep knocking them back early in life.

I'm either a 7B or 8A. I've got a north facing house, so putting it to the alee side sounds good.

Another question, when do I quit watering?

when you stick your finger in the soil and it no longer feels moist.  deep water once a week.

The inlaws prune theirs over Thanksgiving, then stack straw bales all around it.  It gets baled earlier if there's a cold snap on the way.

if it's still in a pot you can just bring it inside.  I suggest a frost-free, but unheated (or not raging-hot heated) area, like maybe a garage.
