What to do with it?  Freeze on the cob, off the cob or can?

I really don't have a huge amount, but it's more than the two of us can eat at it's peak. Have a late crop too.

It depends on how you freeze it, or to be more precise, how you prepare it for freezing.

I have eaten it off the cob and it was fine. I have eaten MINE off the cob and it tasted like cob.

We cut our's off the cob before freezing it. I think it is blanched after it is cut off the cob. All I remember for sure is I am in charge of cutting it off of the ears before it gets blanched.

Well, either way if I'm freezing it, it will be blanched first.  I've had it on the cob and off (frozen) and I think it's not as soggy off, but perception during the off season can be altered.

I've been freezing fresh corn for the last couple years...., it's GREAT.

What I do:

- Blanch on the cob for 4-5 minutes if very sweet, 6 minutes if not so sweet.
- Cool in ice water.
- Cut off cob, put in freezer bag or vacuum-seal bag, and freeze.

I use four ears per freezer bag, which provides enough for two adult and one toddler serving (my little one loves the stuff).  We had fresh corn on the cob this evening, and she had butter and corn spread from ear to ear.
