shoot through the front shoulders and they wont take another step. same if you hit them in the spine just in front of the shoulders as well. I've shot many deer with lung shots and many of them ran various distances but still died. If I'm in territory (deep woods or swamp) where they might hide and I'll lose them I take a more crippling shot.
