Full lard version. Heated by putting the can on the stove in boiling water for 15 minutes. Spread out over the top of the beef. Then top with tons of cheese. Like epic amounts. Shredded Mexican blend is fine if you’re in a pinch. But so many good cheeses to throw on top. Go thick. The cheese is a godsend. A gift from the almighty. Put in oven at 350 for 10 or 12 min. You’re just trying to melt the cheese. NO BROWNING THE CHEESE. remove from oven. Put a nice spaced layer of jalapeños. Then a light drizzle of additional shredded cheese. Back in the oven. (That step needs to be done quickly) the intent is not to let it cool. But to just get the jalapeños and cheese top layer on as fast as possible. Throw back in oven till melted and the top layer gets a few small brown spots. Pull out and add a massive pile of guacamole and sour cream on each side of the dish. Preffered chips are Juanita’s tortilla chips. But anything works in a pinch. Then dig in while still hot and melty. If the cheese gets firm you’re eating too slow. A bottle of green Cholula a bottle of random chipotle sauce to add a few dashes here and there are good add ons. Maybe a few olive slices if so inclined. (I’m not a huge olive fan) Add a side dish salad made from 3 oz tequila and a few H20 croutons goes well. Refill as needed. |
