My wife makes the BEST Eggs Benedict ever. In that dish, eggs poached JUST short of a hard yolk are best. Her Hollandaise is thick and tangy with a little cayenne to top it off....damn now I'm hungry.

Over medium in a hole cut in a slice of bread, preferably sourdough.
Ample butter on both sides. Some call it a birds nest. |

Over easy and I always do the hand thing to the waitress, where as I say over easy, i toggle my hand over.

Over easy, with biscuits and sausage gravy, and crispy hash browns. Mix all together, and enjoy.

Over medium only, otherwise you are eating slimy raw egg whites and that would be disgusting.

Fried hard with a slice of tomato, smoked bacon and provalone on toasted homemade sourdough with mayo/sriracha-garlic sauce mix.

I eat eggs every day. Four eggs and either bacon or pork chops, and a slice or two of toast.
Fry meat first, remove from pan, then raise the heat for the eggs salt and pepper then add a bit of water and put a lid on it until yolks are white on top and runny. Medium. Dip toast or meat into yolks. Enjoy. |

I mainly alternate between over medium and omelettes (w/ peppers, ham, and green onions), but also do scrambled. |

I usually cook them over medium, but I like eggs cooked pretty much any way.
