The MiG-21 is cheap, mass-produced, easy to learn to fly, and decently effective, yet outdated. Vintage look, multirole (As in, it can mount bombs, rockets, etc. not just missiles and cannon) and very fast for it's age. Landing is hard and it runs out of fuel quick. More variants than COVID will ever get.

F6F (specifically the F6F-5) Hellcat.
Broke the back of Japanese combat aviation in the Pacific. Also displaced a bunch of dive bombers off carriers because, hey presto, it could do their job too, and tackle the fighters afterward.

Skyray. Because it looks way cool. I've been a fan ever since I built the 1/72 Scale MPC kit back around 1977 or so. Have not tried the newer Tamiya kit in the same scale and 1/48  yet, but, I have a few in my stash.

I may try a kitbash version with a J79 just for giggles, since they did build a couple with that motor. Will make for a great "What If" kit/display.
