Sharpness. That was the key. If you adjusted the sharpness down to zero it would all meld together somehow.

On the other hand, going into a smoke-free bowling alley these days is just weird to me. It's unnatural, somehow.

And I don't really mind non-smoking restaurants as a rule, but man...a greasy spoon in some podunk town just off a state route needs a light haze tickling your nostrils as you sip your coffee, waiting for the waitress with the curlers in her hair to bring you your Denver omelette. That's just science.

I remember food being generally terrible, save for a small handful of family recipes passed down.

Food-wise, we really do live in an amazing time. Not only is the variety of fresh ingredients available mind blowing by comparison (some of them would have been considered exotic even 20 years ago), but people who actually have an interest in cooking have a wealth of knowledge available, that used to be more or less the exclusive domain of professional chefs (or at least people who went to culinary school). Average people have really upped their game since then. With exceptions for classics like "The Joy of Cooking", many of the popular cookbooks in the 70s and 80s are shockingly terrible by modern standards.

Generally speaking I agree. But the home cooking was still good eating. I won't go into my grandma's cooking, best food I've ever had. My mom was working as a nurse every day but had three things that she did well. French toast, roast beef and.. wait for it..... tuna casserole.

It wasn't state anything, it was the federal '68 gun control law. It went away in 86, it was one of the things that machine guns was bargained away for.

See, there's that technique thing again. You can make cheap cuts taste absolutely delicious and tender, without bashing them with a hammer.

But the average person seemingly had no idea how to do this. And it's hard to blame them, because information wasn't as widely shared and available, as it is now.

Mom managed to feed two growing boys and a picky-eating husband on a college professor's income throughout the 70s and 80s. We ate a lot of tuna, chicken, and occasionally beef. We never ate out unless it was someone's birthday or another special occasion, but we were never hungry. Her cooking style was VERY southern-French and Middle Eastern, with a healthy dose of upper-Midwest casseroles and noodle dishes.

We had a large industrial one at the Tex/Mex restaurant where I worked in my late teens. We used it to smash a particluarly-tough cut of beef for 'Al Carbon' grilled meat, and it was known as 'The Wimp Stick' by us kitchen crew. The handheld industrial blender was 'The Terminator' after it got away from me one day while I was making guacamole, and I painted a line of avocado spray across the kitchen.
