Anise is nasty when that's the primary flavor you taste, but you cannot make pho without it.

Ive seen a lot of people say they hate cilantro and that is has a very strong, foul taste and odor.  I can barely taste or smell it at all.  I think some people are just wired a little differently.

I'm the same way with celery.  Most people I talk to say it is bland with basically no taste or smell.
But I have to leave the room if someone is chopping celery nearby.  It smells so foul I usually can't stand to be near it.  The only way I can eat it is if it's in a soup and has been cooked to total mush.  Anything less, and I can't eat it.

It is obvious that people have different tastes, and. that strong dislikes are just as varied as anything else.

I can't think of any spice/herb that I really dislike, but while I generally really like almost any vegetable and/or fruit, I cannot stand parsnips.  When biting into a chunk of parsnip in a stew or soup, it looks like a potato so that is the taste I expect, then I get that nasty tasting parsnip...I even like Brussels sprouts and spinach.

My mom was always going from one miracle health fad to the next. For a time she would make us take spoonfuls of oregano oil for some reason, and it was horrible. Still can't stand the smell of it on its own, but I don't mind if it's mixed into a sauce.

They add a floral herb flavor similar to oregano and Thyme to stews and sauces.  Required in canned and stewed venison along with a little cinnamon stick.  Also for tomato based sauces.
