Undercooked poultry doesn't taste good.
But... you can have poultry that "looks" undercooked (not quite as bad as that picture) and it still actually be cooked. You go by internal temperature. |

Beef above is a hair undone for me but I have eaten plenty of steaks that were that level.
I order a ribeye medium. If it comes out well done or rare I eat it. So long as its not raw on the outside or burnt on the outside i will enjoy it. Now BBQ chicken i like overdone otherwise just 160 on the temp. |

Well done (or even medium well) beef is just awful. There is no flavor in the dried out meat. You have to resort to a sauce of some sort to make it edible. Not to mention eating well done steak increases colon cancer risk. I like a quick sear on both sides, then throw it on the plate. That goes double for venison steaks. It is flat out inedible unless rare.
Chicken needs to be cooked all the way through, but it too is inedible when overcooked. |

Chicken, pork, and beef are all different. Beef is not inherently contaminated like chicken and pork generally are. As a rule, beef only gets contaminated from the cutting and processing instruments so if they are truly sterile, you can eat beef raw and never get sick. Hence, a quick sear on the outside to take care of any possible introduced contamination is all that is required for safety. This is not the case with chicken and pork. |
