Handle looks good for gripping, with a protruding end (unless you have Archie Hand's) for reverse strikes/heel strikes.
The finger groove up front looks like it protects the hand but allows dexterity for handling and working the grip while moving.
The jimping on the back looks good but without being sharp or annoying.
Blade shape and length are good.
The compound grind is a flex move for you IMO, as it's subtle, but adds to the cost to make, with no benefit that I can see other than aesthetics (which is a good part of the artistry involved in your profession).

My only suggestion would be to ditch the compound grind and pass the savings onto the buyer and sell as many as you can.
Maybe offer a compound grind as an optional upgrade to reduce the initial cost.

Otherwise, looks very good IMO.

My grandpa had a brown one when I was really little, then a light blue one which is the car I learned on. Manual (five speed I think, maybe four). Started out in the passenger seat and he'd have me shift as he drove around town. Out in a county park he'd put me on his lap and have me steer and shift while he ran the pedals. As I got older, then I'd drive with him in the passenger seat, then eventually just drive around the park on my own. I'm guessing this is probably starting around age 10 or so, maybe. He called that car "baby blue" but by the time he replaced it it was three different colors from his rust repairs (still light blue from the roof to the middle of the doors, medium blue there, then dark blue on the rockers).

Not salad, really, avocado, tomatoes and lettuce to go with the tamale. The salsa is garden green tomato salsa my wife canned last fall. Not very hot (she's spice averse ever since being pregnant) but quite tasty.

The sticks - my son brings in a new stick almost every time he goes outside. He says he collects them. We just gather them up occasionally and remove them when he's not paying attention. Seems to work so far.

Makes sense.

My spouse is also capsicum averse. I have this jalapeño bacon I like to add to beans and she just eats around the meat usually, but the bacon was too much for her. Made the beans awesome, but now I have to add it in after the fact.

The most difficult part was deciding to do it and committing to getting the house sold.  It fell together pretty quickly after that.  I'm still not 100% sure it was the right thing to do but we'll have some memories. Lol

I had read about people removing the 2nd detent.  What advantage does that bring?  I might give it a whirl.

It eliminates extra drag on the action. I didn't feel it was necessary on the one I had, but a lot of people do it. Might just be one of those things that some chucklehead on youtube did and then everyone else started doing it too because people are lemmings.

I liked the look, action and grind but I kept catching shit on the choil and it drove me nuts.

I've never had any issues with the 2nd detent (other than almost losing it the first time I disassembled it). Mine flies out smooth as butter.

My kid loved sticks when he was younger.  Always had to find one and then carry it all over the place.
