Pear-almond, yep. The stuff around the pears is about 2/3 almond cream, 1/3 pastry cream. The almond cream is easy to make. The pastry cream is fairly easy but takes a lot of whisking to avoid becoming sweet scrambled eggs.

As a bonus I have probably 1.5 cups of the mixture left over to do something fun with. Not sure what, yet.

I don't agree.

The lighter colors can be frustrating to work with but I wouldn't say it's any worse to have on a knife than any other comparable material.
