I put the knife there really quickly as my wife hates waiting for me to set up shots.

Let me see if I can find the wrapper for exact details but it was an aged cheddar and blue cheese they may have put together there. The cheese counter guys were raving about. Huntsman maybe?

It was good not my favorite on the board. The goat blue was pretty awesome

That makes a lot of sense. (and speaks to me ATM because of the nature of my kiln.).

The main reason I am thinking about a different steel is that I want something more corrosion resistant.  We'll see what happens when I run out of 1084. 

I hate not having a decent steel supplier close by. The only steel I have managed to find locally is o1, but it's expensive (a little over $10 a foot for 1.5"x1/8", iirc). In the quantities that I order, shipping can double the price of my order. 

I'll get something figured out though. 


I recently reground my old hickory chef's knife again and this is the first time I used it. I cut one medium onion and this is the patina that got started.

The Hati. More specifically the newer Hati R's which are the Half Carbon Fiber variants of the bigger F95 model.

Let me see if I can find a pic with both so you can see the size difference or if you have any specific comparisons you think I have that would be a good size reference

Add any fat? No.

There was some fat on top, but not marbled into the brisket. we are guessing the fat that was there melted off and chose not to soak into the meat because we are not worthy.

cancelled my order for the wicked edge pro pack 2 and just went with the wicked edge gen 3 pro instead with a few additional diamond stones and some leather strops

figured id probably want one anyways after trying to sharpen so many FFG knives, worth the extra $200 to just get it.

I only have the lightweight PM3 in M390. It's a DLT exclusive so you gotta give it props.

DLT has been quite in the exclusive game lately. About time for a new one to pop up.

I guess I have 5 PM2s for the same reason I have 5 Manix 2s.

The St. Nick's stuff is legendary. They already said they will never do another run of any of their exclusives. They'll be worth as much as Beanie Babies some day.

This is absolutely fucT. I am furious. How is it you get a damascus knife from him before I do?! I am just livid. I knew he hated me but this really takes the cake. Holy balls am I mad. The action on the grey one is much nicer than the black one.  I think my black one has something wrong with it.  My first Spyderco was my yojimbo 2.  It's super smooth. Very shortly after I bought this pm2, expecting the same kind of thing. It was much more stiff. I've tried polishing the washers and adjusting the pivot but it's just always been "tight".

Oh well. It'll probably sit in a drawer for a while now. Lol

My Maxamet PM2 came dialed in perfectly. Every other one I've had needed breaking in and a little pivot adjustment.

The blade stop pin plays into the equation too. Loosen it slightly and see if that doesn't help.
