Originally Posted By WICOUNSEL: If you fail to plan, you are planning to fail - Sun Tzu Well... First sous vide machine I got in was broken. Reading the reviews apparently that was a regular occurrence with the model I chose, company wasn't standing behind it for warranty and there weren't many SV accessories that fit it as it was not main stream. But I had it long enough that I realized my stock pot would be too small. So I return it, do some more research and the Nano was popular enough that there was lots of aftermarket stuff made for it. So I ordered that thinking I would get some aftermarket stuff like a container and lid etc. Talking with my brother he pointed out that he picked up a larger stock pot since he can still use that on the stove, SV container you can't. That made some sense. So then I had to go down the road of finding a good stock pot. Do you know how hard it is to find an american made stock pot? Some thick aluminum ones made here in Wisconsin, some ultra ridiculous priced SS ones made here too, but stuff kept adding up for this new endeavor. Found an old Farberware made in the Bronx for cheapish. Took forever to get in. Talking to my brother he admonished me for thinking I would use ziplock bags. So I had to get some resuable "safe" vacuum bags. Finally, ready to go. Wife had looked up cook time and temp when we had gotten the first one. Now looking I see the temp and time she gave me were for the quickest cook. So already short on time, try to get it prepped. Don't have cabbage because she used it for crack slaw. Improvise with a shredded cruciferous mix. Get the brisket and mix in the bags, pump the air out. Get them in the pot, SV in there, shit's still floating. Damn it. Find some glass containers to weight the bags down. Set time and temp, good to go. Nice easy interface. Except the warm water I put in there is only dropping in temp according to the SV. And it doesn't look like the water is circulating. I thought part of the design was it should circulate? Maybe the cold So I wrap the pot in towels and cover it best I can (pot lid won't fit at all). I read the only downside of the Nano was that it takes a bit longer to get up to temp. So I leave it. https://i.imgur.com/PfExSls.jpg After a while, it still isn't getting warmer, running out of time if this is supposed to be mother's day dinner, even on the "short" cook time. decide to start pressing buttons. There's a button that looks like a "play" button. Does it play music? Why the hell is there a play button on my food device? So I press it. I'll be damned, water starts circulating. I didn't have it on before apparently https://i.imgur.com/d9ivSCg.jpg So...lost some time...might be having sous vide tomorrow...but it is running. It took a while to get up to temp. maybe 45 minutes. Bags started inflating after it got warm, had to weigh them down with more glass containers. Hopefully it all turns out OK. This first run might have been a test run...lot of fucking around. Better be good. Kids were watching Parent Trap (original) in the background. It was at the part where the minister asked for a double bourbon. Sounded good. https://i.imgur.com/8i0Fp0Y.jpg Been meaning to compare these side by side. The double oaked really is smoother than the regular. Tasty stuff. Side by side, original wasn't as smooth and good as I remembered. Still good, just not as good as the double oaked. View Quote I know I sent you the link to the stock pot cover for the Anova. What's with the towel wrap? Use hot water to fill the container, it cuts down on heat up time. |

Just a few Allen Elishewitz folders I took off the prize table at the Steel Challenge over the years.
I always preferred grabbing one of his custom knives rather than some generic Ruger or Smith pistol that I'd just end up selling off once I got it transferred. He was a big supporter of the match and I appreciated that... From top to bottom we've got a Pharaoh with a 3.5" RWL blade, titanium frame, and AE matrix scales; a Myrmidon with a 3.5" Damasteel blade; and an Emperor with a 2.75" blade, titanium liner, and G10 scales. No idea what value they may currently have but they certainly do bring back some great memories. Attached File Attached File Attached File |

I was thinking about selling my Game Warden.
Attached File When it comes down to it, I like the AD better for skinning/processing and they're super close in size and feel. The AD cuts better and the tip is more useful. Attached File But I've thought about it some more and I think I'm going to strip and shine the GW like I did the AD including removing the scales completely. The coating is chipping at the tip and I think it might perform better if I get it to bare metal. Attached File Any interest in seeing a short how-to on stripping? |
