I made a 12lb roast into jerky last fall. I want a bigger dehydrator. There are some sweet 16 tray setups on amazon that the dehydrator chamber unhooks from the electrical portion for easy cleaning.

I used oak smoked salt and smoked chili powders to help cheat the smoked taste. I also forgo sugar in the brine. Beef gas enough glycogen.

I cut it thicker and cut with the grain. I prefer to have jerky that needs chewing I don’t have dentures and I’m not 90.

ETA:  Seems pretty killer for drying foods

For everything but salt that’s fine.

I just did a 2.5% oak smoked salt by weight. I’ll let it sit until later in the week. The delay helps the salt get into the muscle of the thicker cuts. Its a brine/salting technique from the salume making circles for whole muscle cuts curing.

Chipotle meco and smoked serrano powder along with garlic and onion went in the mix with black pepper.

Well, inspired by this thread, I bought a London Broil (select), froze partially and sliced it thin, marinated it (no cure #1) and threw it on the smoker.  Went on the smoker at 125 because I foolishly assumed the problem would be keeping the temperature low.  Temp dropped to 109 for first hour.  Got it up to 140 for second hour. Hit 150-170 for two hours, then the temperature ran away from me and couldn't get it below 210, for last two hours.

Tastes really great and no botulism, e-coli, or salmonella so far, though haven't passed 36 hour mark yet.  I will probably be a little more conscious of food safety in the future though.

This is hamburger jerky so I do shoot for 165. Put it on low and let it go 4 hours or so. If I used sliced steak I'd leave it on low for 30 minutes or so to get a smopke flavor then pull it. Smokers, even on low, are just too hot IMO. Alternatively you could get the smoke tubes and cold smoke the meat then put in on the dehydrator.

Two methods I came across for better food safety with jerky were using cure #1 (Prague Powder) in the marinade at about 1tsp per 5lbs and pre-drying the jerky in an oven at 300F for 10 minutes before dehydrating/smoking. Smokers in particular (moist, low-oxygen environments).

Although, I found this study from the National Institute of Health where they innoculated flank steak jerky with staph, clostridium (botulism), bacillus subtillis, and salmonella.  They then dehyrdated it at 4 hours at 127, and 4 more hours at 119.

From the abstract: "Some growth of inoculated S. aureus occurred initially but total numbers of all other added microorganisms decreased rapidly from the start of drying and although significantly reduced in numbers at the end of 8 h treatment, they survived processing. C. perfringens cells were not detected at the end of the heated-drying regimen but were recovered later in an inoculated sample stored at 2.5°C for a month. Contaminated jerky stored at 20°C and high relative humidity (RH) for 26-28 d did not contain detectable added bacteria, whereas identical samples stored at 2.5°C and low RH contained viable S. aureus and B. subtilis as well as C. perfringens . Domestic preparation of jerky from beef of normal retail quality would involve little risk provided initial drying is done rapidly at temperatures equal to or greater than those used in the present study."

So, basically, eat your jerky quickly and don't store it at low relative humidity in the fridge for a month.

The one that makes me nervous is botulism (from "botulus", Latin for sausage - because it was first called "sausage poisoning").  As it is, odorless, tasteless, and grows quickly in moist, anaerobic environments (i.e. smokers) and if the heat doesn't come up fast enough, can develop spores and reappear.  And it can take from 18-36 ours to show symptoms, and the symptoms are you know, paralysis.

Having said all that, you can see above where they purposely contaminated the meat with that bacteria and cooked it way below the FDA levels with no cure, and there was no detectable bacteria at the end of the cook.  Though, if you ate it 28 days later, you might have a problem as the bacteria returned in viable quantities (so clearly only temporary inactivated it).  So, first step, don't contaminate your meat.  Use clean cutting boards, knives, etc.  With a solid roast bought at a retail store and clean stuff, shouldn't be an issue.  Ground meat of course, easier to contaminate and requires more caution.

Big thing is I need a jerky rack for my smoker.  2lbs is tough to fit in one go.
