How much of your dried meat bounty can be re-hydrated for a meal or two or more? And, how much water would be needed to make a dinner..? Just asking …. Jerky is wonderful, if, you have water to re- hydrate it for a meal. Munching on it, is great, but, in the long term…. What meals can you make with it? I’ve got a lot of jerky, home made, frozen, just because… but, what meals are viable, tasty and nutritious? In the long term, food needs to be rotated, or you get tired of the same old thing…… You can only eat so much of stroganoff, tacos, mulchaca, etc… Hence, my question….. Looking forward to ideas… |

If you want to make life a bit easier, ythey make a few different tools for jerky. The slicers would probably make processing steaks into jerky a pretty quick task.

Thank you all for the replies. Vacuum sealed jerky, here, lasts, 2-3 years in the freezer.
Like in my question, earlier, I have used it for several recipes, including using it in prep dried foods. Oriental foods, re-hydrate, like most of the rest of the ingredients. Shrooms, onion, garlic, ginger, meat, noodles, etc. Yes, I do can meat, but, he isn’t fond of the texture, regardless how it’s cooked. I personally don’t care. It’s meat. I grew up on canned meat…without electricity, canned or dehydrating was the only way to preserve the animals and veggies we harvested. Thank you again for your suggestions. |

5.3oz of store bought jerky - $11. 10oz of better/equal quality homemade jerky - $11 (it actually would have been more than 10oz; but after all the two racks were covered and I had more meat leftover, I threw the extra meat away because I didn't want to stay up another 6 hours to smoke the remainder.)
I'm going to try to find some bison or elk for my next batch I think. |

How to increase capacity on an 18" WSM? Toothpick hang it between grates? Flat I can do maybe 1.6 lbs using both grates. Much easier than toothpicking every piece though.

I hate wasting food, especially something no where near going bad. It would likely make a great stir fry as well. |

Go get a bit of burger, or pull it out of your freezer, defrost and put it in a bowl, add garlic pwd, onion pwd, salt, pepper, A1 or Worcester sauce and maybe a touch of bullion and or smoked flavor, or cayenne or hot sauce, then, add a smidgeon of water, mix well, ziplock it in the frig. for a day. Use plastic wrap to spread long thin strips, lay them on aluminum foil. Set the foil in your barbecue, or on a baking pan in your oven….. Oven, turn the temp to 200°, then, down as low as it will go….a few hours it will definitely smell good… BBQ, get the coals on fire, let them catch, add whatever wood…mesquite, hickory, apple, etc…. Cover to extinguish the fire. Set the aluminum foil on and shut the air vents…..open the top vent, just enough to let a bit of the smoke out. Don’t open the Q, until it has begun to cool off. A couple of hours…. Jerky! BTDT |
