I grew up in Cajun country (I know, surprising). Growing up, we also ate "Okra Gumbo" (I was never a fan). But it never had roux in it. Adding Okra to a gumbo with roux is more of a Creole thing.

Generally you won't see okra in gumbo at any Cajun restaurant.

My LA in-laws are neither cajun nor creole, I guess, but they make gumbo out of whatever they have, and every one of them grows okra in their garden. They all have chickens, so that’s pretty much their idea of gumbo.

I’m okra agnostic - I like it, but I won’t pitch a fit without it either.


I need another trip out that way in the spring, when all the parish churches are doing fundraisers and selling jambalaya.  Sure I can make pretty good jambalaya myself, but there’s something special about the stuff that comes out of an ice chest in the wal-mart parking lot, LOL

I’m also waiting for that first cold front to make chicken and dumplings… mmmmmm

Tomato Chicken Caprese on the Blackstone

Seasoned boneless thighs grilled on Blackstone
Smoked garden tomatoes, fresh garlic, fresh onions on the grill and smashed them with a fork
Added asparagus into the chicken fat and added mozzarella cheese with fresh basil and steamed with water
Chicken on top with smashed tomato mix
Eat

The color isn't great, but it tasted good.
