Awe sorry to hear. That's a tough pill to swallow. I know some care facilities are better then others. Hopefully its a better one. (I'm familiar with Rotten -croch-fester, my dad has been in numerous facilities over the years. It's daunting and always scary for the patient and the family.

Just alot is coming at the same time for ya guys. Just take it little by little - hopefully things improve soon.

Not fun unfortunately. Power is alot of responsibility and throwing in the distance and young ones. Ugghh. Sorry you guys hafta deal with it. It's family though, what ya gonna do.

At this point, I would rather have the tech support calls from my dad then deal with that. He is a fighter and keeps going in and outta the hospital for about the past 5 years.  I can't say I envy you guys. Kudos for being there for the family though.

Part 1 of Sunday Dinner is now cooking:
Spaghetti Sauce.
When it's done I'm going to have a pair of Pork Ribs.
Pork Ribs are part of the Sauce that is cooking right now.

Pork Ribs in about 2 hours, half an hour later I'll be cooking Ziti

2 boxes of Ziti to be cooked then baked with the sauce and a few bags of Mozzarella cheese.
I have 6 pounds of Mozzarella cheese waiting.
I wonder if it's enough

Separate.

When the sauce is nearly cooked I'll have the spare ribs.
Normally I'd use Pork Neck Bones, but as they are rather hard to find I'm using easy to find Pork Ribs.
Everything is finished cooking then I start boiling the ziti.

Cooked ziti into a large aluminum pan.
Add the Mozzarella and sauce to the ziti, stirring carefully.
Cover everything with a layer Mozzarella and bake at 400º.
Bake until the cheese on top Tells you it's done
....More of an art than science there...

Take out and enjoy.

Making spaghetti sauce is a Yuuuge undertaking.
The hardest being knowing you have to stir the pot every 10 minutes or so.

I add so much cheese to my sauce that it nearly take a slight orange hue when finished.

You know all the cheese people add to their dish of spaghetti when they're about to eat?
I add the cheese Before.
I don't need to add additional grated cheese to whatever spaghetti dish I'm going to eat.

Forgetting all the politics, that is extremely cool. I'm not a big fan of the olympics as far as watching goes, but I respect the hell out of it for what it represents and how amazing the athletes have to be to compete on a world level. To me it represents the best of what humanity can do and how we strive to better ourselves
