Slice potatoes 1/4" thick.

Slice onions 1/4" thick.

Heat LARD in large iron frying pan.

Add potatoes and onions.

Add some fresh parsley, salt, and pepper.

Fry, continuously flipping until golden brown.

You are welcome.

Keep them in a cool dry, dark place and they will last for quite awhile. If you have a basement that isn't damp, that would be a great place for them. We grow both, and put the taters in plastic baskets so they don't rot and the onions go in pantyhose legs and get hung up in the garage (no basement at my house).

Yup.

Local grocery stores were out of potatoes and onions.

The local store that caters to small businesses had them on 50 pound bags.  Cheap.

Since the Gov shut down dine in last week, a local produce grower/wholesaler has been advertising on Facebook, they normally exclusively sell to local restaurants but I guess they have more than they can sell right now and selling it “retail” is better than watching it rot in their warehouse.

Side note: I’d bet they’re making a good bit more doing this than they were selling to restaurants, I can’t imagine a restaurant paying $20 for a “copy paper” sized box of mixed fruit and veggies (no choice in what the box includes) which is what they’re charging people...

This/scalloped potatoes. My mom used mushroom soup instead of celery soup, crushed some crackers fine and grated cheese on top. Made huge roasting pans of it. Freezes ok. Very tasty.

The using them as seed potatoes is a good idea too, if you have the garden space.

Yup!! Homemade potato chips are amazing! Especially if they get blanched correctly.

Hash browns, work.

German fries use potatoes and steamed onion.

Beer batter onion rings are great...simple too.

Baked 'bloomin' onions are a great side with a steak. Cooking them on the BBQ grill works great too.

I grew up eating potatoes every single day.

You can burn through 50 pounds with no problem.  Try making them as many different ways as you can think.  Baked, boiled, mashed, riced, fried, casseroles, hash browns, ... Lots of versatility there.

Build a couple of wooden bins for potatoes and onions, pour them out of the bags into the bins and store them in a dark cool place. They will keep for 4 or 5 months.

Eat more taters and onions.

In a few months when the local farmers markets open, buy bell peppers and pickling cucumbers. Chop up the onions add equal parts bell pepper and cucs. Mix them up.

Can it all up using the BosemanMT pickling method.

You will have a good mix of pickled stuff for years.
