I cooked batches of mashed potatoes in the instapot and froze them. I have chopped up onions and green peppers froze them for steak and used onions for omelets.

Slice potatoes 1/4" thick.
Slice onions 1/4" thick. Heat LARD in large iron frying pan. Add potatoes and onions. Add some fresh parsley, salt, and pepper. Fry, continuously flipping until golden brown. You are welcome. |

Keep them in a cool dry, dark place and they will last for quite awhile. If you have a basement that isn't damp, that would be a great place for them. We grow both, and put the taters in plastic baskets so they don't rot and the onions go in pantyhose legs and get hung up in the garage (no basement at my house).

I am lazy so, sliced potatoes alternating with sliced onions and cream of celery soup on top, bake. |

Put onions in oven, skin and all. Bake for 45 minutes. Remove onions from skin, salt pepper, butter. Done Makes the house smell awesome as well

My mom used mushroom soup instead of celery soup, crushed some crackers fine and grated cheese on top. Made huge roasting pans of it. Freezes ok. Very tasty. The using them as seed potatoes is a good idea too, if you have the garden space. |

I’ve bought those quantities before. Cool dry and dark place is your friend.

I grew up eating potatoes every single day.
You can burn through 50 pounds with no problem. Try making them as many different ways as you can think. Baked, boiled, mashed, riced, fried, casseroles, hash browns, ... Lots of versatility there. |

Build a couple of wooden bins for potatoes and onions, pour them out of the bags into the bins and store them in a dark cool place. They will keep for 4 or 5 months.
Eat more taters and onions. In a few months when the local farmers markets open, buy bell peppers and pickling cucumbers. Chop up the onions add equal parts bell pepper and cucs. Mix them up. Can it all up using the BosemanMT pickling method.
