I'm not a big fan of brains or lung, but pretty much everything else I'll eat.  Just had panko crusted beef liver fried in bacon grease.  That was good.

Foie Gras has to be my favorite.

Interesting.

So going back to the OP/ question  I was curious, what in your opinion is the reason these sorts of foods haven’t been normalized within the US, Canada and Europe?

I think you would admit that they are less common that muscle tissue as the go to for protein intake

I don't eat tripe, but i'll eat about anything else. I will eat natural sausage casing, but it's been stripped of the villi.

Heart, liver, tongue and other parts aren't 'waste handling' parts, junior.

Of course, I don't let my 'feelz' rule my taste buds like y'all snowflakes.

I travel a fair bit for a living and can't say I've ever seen a restaurant outside the US that sold exclusively intestines either. From what I've seen most people around the world prefer meat when and if it is an option.

Even in China, in most regions, it seemed organs were usually either an appetizer or side dish and rarely the main course.

I also love country fried chicken livers.  (never cared much for gizzards tho)

I consider them delicacies.

This.  We ate liver all the time when I was a kid partly because it was cheap.

No one eats liver anymore.  I can't even find it at my grocery store.

My grandmother made me beef liver and onions a ton when I was a kid and I loved it! Just been so long I've forgotten what it tasted like.

I started eating "delicate meats" in high school. Heart and tongue was what got it started. I never cared for liver. Not a big Rocky Mountain oyster fan. I do like tripe, I like sweet breads, I like Haggis(lung and blood usually). Escargot isn't bad either.

Kidney tastes kind of chalky like liver when I tried it, so not a fan. Have yet to eat eyes or brains. My uncle works for the USDA as a research scientist. He told me to stay away from cow brains, but hog brains were okay. Chitlins are on my list to try.

I always figured if times were tough, I'd like to know what parts taste good and cooked how.

It's where most animals store the fat soluble vitamins:  A, D, E, and K.

In the days before multivitamins, eating liver used to be the best way get these in your diet.
