Produce has a unique set of issues, there is both a time and a temperature issue that needs controlled to maintain quality in transport, and harvest personal must be available to pick & package the product at the proper time. If it get picked, packed, cooled & wrapped on a pallet, but there is no truck to move it, the sunk costs in the lost produce will have to be made up on the produce that makes it to market. |
