We (where I work) designed and installed a kill floor where they kill 1600 cattle in one shift.

That isn't even especially big as meat packing plants go.

Probably something along the lines of this.  They go through a machine that slices their neck open and drains the blood.  You can see the cut on their necks in the Op's video as they are moving down the line.  (before their heads are ripped off)

How?
They come single file between rails to a head gate (just like in a corral). Their head gets latched, the back legs get hooked, bolt gun to the forehead and the rear legs get hoisted up as the head gate releases. About one every 15 seconds, with a few breaks in the shift.

From there they go to a couple lanes to be bled, skinned and butchered.
