Every year or so, my local Mitsuwa will get a gigantic tuna flown in direct from Japan to Chicago,  and butcher it in the middle of the store for everyone to see.  


Then they sell off hunks of tuna for a reasonable price. 1  Several hundred people show up for the spectacle.

I spent $40 or $50 on fish chunks after one of these shows  ...    1and developed a severe acute case of fish pox (itchy scratchy skin with welts).  Proof that the fish was fresh! Totally awesome!!!

Had some sushi back in March while I was in Kansas and it was just fine. Sushi in the US is flash frozen, also even in places like Japan, some of the fish are aged for over a week before cut into sashimi and served.

Escolar is the best (called White Tuna sometimes, but isn't tuna at all) soft texture that melts in your mouth, rich, buttery taste, it's perfect.

Just don't eat more then 6 ounces...which is a shame because I think I could eat much more in a sitting if not for that pesky gempylotoxin.

Till I was in my early 20's I refused to even try it, then my brothers friends wanted to take him to a sushi place for his birthday since he loved the stuff. I was promised that the place had plenty of non sushi offerings on the menu.
