I have done Delmonico's, Ruth Cris, Morton's and whatever the uppity steakhouse in New York New York.

No contest.

We showed up dressed pretty casual from SHOT and the service was outstanding and the food was top notch.

This makes me think of one of the places Bourdain went where it was a 19-course meal for $600/plate.

There are super fancy places like that in Vegas, but I don't know if OP was looking to spend quite that much.

My buddy who lives out there swears by Charlie Palmer's steakhouse.

STK at the Cosmopolitan ain't bad. I like the atmosphere....fun music and not too formal or stuffy.


The desserts are fantastic. Had the Kobe when I was there....$40/oz.....

       Wynn steakhouse was my least favorite of all the high-end steakhouses I've ever tried.










It has a terribly pretentious atmosphere and obnoxiously priced food.


That would be OK if the food was worth cutting off a testicle for, but it really isn't.


My steak was not even close to exceptional.  My sides were very bland, and the dessert was actually the best part of the meal.

I ate at Old Homestead Steakhouse at Caesar's.















It was one of the best steak dinners I've ever had.
The sides were amazing.  The steak was perfect.






the service was superb.






 



















tell them not to cut your steak (they cut it into bite sized pieces!)




I don't remember how it happened, but maybe the waiter asked?




I told them no.

Have read none of the responses, so don't know if someone beat me to it.....at SHOT 4 years ago, I ate a bone-in rib-eye at Emeril Legasse's (spelling???) restaurant at the Sand's.  It was a religious experience.  I'm on old cowboy from Texas, and I never had a steak like that.....including the ones I butchered, aged, and cooked myself.

I've not experienced any of the others, so this may be of limited value to you.

Went to Vegas for a Bachelor party.13 loud ass grown men immediately went dead quiet as they savored the first bites of their 28 Day dry aged filet mignon from (Smith & Wollensky). It was an absolutely Amazing Meal and couldn't recommend it more. The Pit Boss at Harrah's Poker room and one of the locals both recommended it to us.

I love the rib cap and beef Wellington at Gordon Ramsey's. Been to a few others in Vegas but Gordon's is my favorite.

Not any more. The management has changed recently from the older owners to the son. Service has gone to crap, steaks are cut much smaller, and the place is looking even more weathered and by clean (xmas tress left up have a mountain of greasy dust on them). Read the yelp reviews they are right on. I live 5 mins away from the place and it kills me that they went to crap cause I loved it. It use to be a great hidden Vegas secret. No more

Prime in Bellagio







I saw this mentioned earlier.



This was a phenomenal dinner, with probably the best table service I've ever had.



Food was spectacular.  I had peppercorn Strip.










If you reserve the right seating at the right time, you can watch the huge fountain show out front, through the window.

Well, no shit.. that's obviously from their website.... however, this was on of the best steaks I've had in Vegas.

 
I've been there 5 times in past 2 years for work, and money is no object.  My bosses seek out good places to eat, and I reap the rewards.

I don't care how cheesy their ad is, their steak was perfect.

I can't speak for the others but I did stay at the Encore and we ate at SW and it was fantastic.

Their dinner breads were killer too and sides were grossly large.

We didn't have reservations but were seated shortly although it was next to 2 gay guys having a spat.

So other than the ambiance it was good

Craftsteak is very good. Their bartenders are phenomenal.

Though I think that the Golden Steer is the best steakhouse in Vegas. Pure 1950's, pure rat pack, pure Vegas.

I've been to a good number of them out here. It's really hard to say which one is the best, they are almost all very good. My two favorites are Steak and Cut.

Not a steak house but Lawry's Prime Rib was excellent.

Old school velvet and wood decor.   They carve and serve you from giant stainless carts right at your table.

Incredibly good prime rib and sides.
